Healthy Salad Recipe for Weight Loss
Salads are known for being one of the healthiest dishes to eat for weight loss. Some people, however, are not too fond of salads because of what comes to mind when they think of them. Half rotten iceberg lettuce, a few shreds of cheese, and grape tomatoes.
Well, all salads are not like that. I had to learn that myself, as someone who was not too fond of salads either. For my mom’s birthday last year, I cooked for her, and one of the dishes I made was this salad. It was such a hit; she and my dad wanted it again for Thanksgiving!
This salad is packed with flavorful, healthy foods such as bell peppers and tomatoes. I ended up switching up the recipe slightly on Thanksgiving by adding additional bell peppers and jalapeños to this healthy salad.
Also, this can be vegan or vegetarian. You can also add grilled chicken, shrimp, or salmon to it, for additional protein. If you are aiming to eat plant based, chickpeas or black beans are great additions to this salad.
Ingredients (Mom’s Birthday Salad):
3-4 baby cucumbers
1 red bell pepper
1 ripe avocado
1 Roma tomato
1 box of spring mix
1-1.5 tablespoons of grated parmesan cheese

Ingredients (Thanksgiving Salad):
4-5 baby cucumbers
1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
1 jalapeño pepper
1 Roma tomato
1 ripe avocado

Rinse off all ingredients prior to cutting them and putting them together. I paired this with Italian dressing and Caesar dressing. They are both phenomenal dressing options for this salad. Feel free to experiment with different types of salad dressing.
